# How to Prepare:

01 - Preheat oven to 350°F. Grease and line two 8-inch round cake pans with parchment paper; lightly flour the sides.
02 - Whisk together the all-purpose flour, baking powder and salt in a medium bowl until evenly distributed.
03 - In a large bowl, beat the unsalted butter and granulated sugar with an electric mixer until light and fluffy, about 3 to 4 minutes.
04 - Beat in the eggs one at a time, scraping the bowl between additions; mix in the vanilla extract until combined.
05 - Alternate folding the flour mixture and the milk into the butter mixture in three additions, beginning and ending with the flour; gently fold in the 2/3 cup sprinkles just until distributed.
06 - Divide batter evenly between the prepared pans and smooth the tops. Bake 28 to 32 minutes, or until a toothpick inserted in the centers comes out clean. Let layers cool in the pans 10 minutes, then invert onto a wire rack and cool completely.
07 - Beat the softened cream cheese and 1/2 cup butter until smooth. Gradually add powdered sugar, then mix in vanilla and 2 to 3 tablespoons milk to reach a spreadable consistency. Fold in 1/3 cup sprinkles and chill until assembly.
08 - Place one cooled cake layer on a serving plate and spread a thick layer of the funfetti dip over it. Top with the second layer, then frost the top and sides with the remaining dip. Decorate generously with extra sprinkles and optional candies. Chill at least 30 minutes before slicing to set the filling.

# Expert Suggestions:

01 -
  • This cake is secretly as addicting for adults as it is for kids — the funfetti dip brings a creamy surprise guests won&apost see coming.
  • It became my go-to for spring parties because you can customize the sprinkles and candies for any cheerful occasion.
02 -
  • If you rush the cooling, your dip will melt and slip right off the cake — learned that one on a summer day with impatient little helpers.
  • Adding sprinkles to the batter too soon causes colors to bleed and disappear, so stir them in right before baking for best results.
03 -
  • Don&apost overmix your batter after adding the flour — keeping it gentle is key to cakes that stay fluffy.
  • I always gently tap the cake pans on the counter before baking to release rogue air bubbles — fewer holes, prettier slices.
